Before they do any tasting, however, they do a lot of smelling. They begin marking up their score sheets immediately, noting the aroma of the beans when dry and the fragrance when wet. They sniff the dry coffee in each cup before the technicians pour near boiling water over the samples. They then sniff the wet grounds and wait as coffee particles float to surface, creating a crust of coffee grounds. U.S. AID, a U.S. government’s development organization, built cupping laboratories in Nicaragua and other coffee-producing countries. U.S. AID got this idea from one of the SCAA’s founders, Paul Katzeff. U.S. AID pays to build the labs, and the SCAA’s non-profit arm, the Coffee Quality Institute, provides the teachers through its Coffee Corps program.
Neither Peter nor Geoff had studied economics, but in their efforts to figure out how to do business at origin they spent at lot of time wrestling with stunningly complicated economic issues: how market function, the impact of globalization, the devaluing of commodities, economic cycles, and the legacy of colonialism.
